I'd advice you use the simpler slic3r instead of sfact. The other choices are good to start out with.
Remember to try out other firmwares (like marlin) and software (like Cura and repetier-host) so you are sure you use what's best for you, and don't get locked down to only one package.

If you are using a Mac you should also try

it's a special mac version of the Repetier-Host. Not sure if it runs with leopard, but chances are good. New version with up to date slic3r and new gui will come soon.

Marlin isn't an application. It's firmware for the microcontroller.

When you download the Marlin zip file, you will see a folder (named Marlin) inside, along with a README file which explains what you need to do to customise it for your machine. Load the marlin.pde file into the Arduino IDE, make your changes, compile it and then upload it to your board of choice if the compilation finishes successfully.

Those "variables" are gcodes that you can send to your printer to do specific things from your host software. Just open configuration.h and modify what is needed (motherboard, steps, etc). It may be overwhelming now, but it gets a lot easier when you get the hang of it. Also, Marlin has an auto-set gcode command for setting PID values which saves time.
