What are the AUX pins on RAMPS and what can you do with them?

Auxillary functions and whatever you want.
I use several pins to control some LED lighting I have under by X-axis carriage and a 2nd fan. LCD screens or control boards may also interface via the aux ports. While not aux ports per se, the servo ports can be used also for controlling a servo or some other PWM use such as a fan.
