I am looking for examples on building custom cases around guts of devices such as tablets and cellphones.

What I mean to do is replace the case of a device with someting else. For example printing a new case that combines a tablet and a usb keyboard in order to make for example a lightweight ARM netbook. Also it might be cool to have a small laptop where the mousepad is the cellphone driving the whole unit. I know that such laptops can be bought as ordinary products, but i'd like to have more options.

That guy builds his own Occulus Rift clone from scratch. It needs a case, but more importantly, I like to put a hi-res, powerful smartphone in place of the screen. To build that, one simply builds rather large novelty glasses where the lenses can be attached permanently and a smartphone can be inserted as the screen/computer when in use. Think about it; a piece of printed plastic with two lenses that can turn your cellphone in to an awesome 3d desktop ( A keyboad and mouse and some software is needed though ).

This could be perfect for travelling. You could sit on a crowded train using practically a desktop computer with the equivalent of say, three large displays.

I'm a noob to 3d modeling, but my understanding of the typical workflow is to start with a 3d model of the object(s) you want to encase, then either subtract that from the volume of the case or grow it by a factor to make a uniformly sized shell. What I have a problem with is a process for making such models from existing objects without resorting to expensive scanners.
