With All-Metal hotend with ABS, why not just run max temp?

I have a E3D v5 hotend, and printing ABS. I have read how people do tests to find good temp for even different colors of same manufacturer of ABS, but why not just run the same high temp for all of them. For example this person ABS Temp Test Ran at a bunch of different temps, and it seemed that in this case the higher ones were better. If so, why doesn't everyone just say print ABS at 265, or even just say, print at the highest your hotend can reach? Thanks.

Depending on the exact composition of the ABS (or any other thermoplast) it reacts different ant different temperatures.
If you go to high it might clog or start to degenerate. Also the print might get to hot and the printed part will simply end up in a half molten heap of plastic. Keep in mind that you have to find a balance between the filament melting enough to get good layer adhesion and fast enough cooling of the printed part to maintain it's shape.

Thermal decomposition resulting in carbon monoxide/hydrogen cyanide, for starters. Later on, autoignition.

To translate for greenman100 poison and fire. Also not all ABS works well at high temperatures, if you want a good baseline for printing 240C will get most ABS out of the nozzle safely.
