I haven't used a flexible steel plate myself, but a 0.5mm should give you something with enough flex to pop a print loose. High-strength spring steel would be ideal. If you are using mild steel, though, you might want something a little thicker (0.8mm?) to keep from inadvertently putting a permanent bend in it.
