Just my 2 cents for selecting a specific MPU
I have read the decision to use the adinio board because one of the reasons was "there was not proper C compiler for the PIC" The atmel's are not that ready available, well at least not in South Africa, but the PICS are.
There is a free "Lite" version available which is fully ANSI compliant.

It has a memory limit of 2K but it should be OK in any case.
Maybe you could check it out. I would rather stick with the PICS.
