I have these ESP8266 WiFi boards with CH340 USB to serial interface and they are much faster than I'm used to, from these FTDI chips or the atmega16U2.
Their Baud rate is up to 921600....much faster SD-card uploads grinning smiley

I wonder if there's a chance to bypass these chips and use a standalone USB to serial interface with CH340 chip instead?

Depends what your connecting to..

RAMPS its very easy just connect a 5v RX and TX signals to DO and D1 on AUX-1

You got to watch the baud rates though, some are just to far out of spec for a 16MHz atmel
check the baud rate you want with [wormfood.net]

Many mega2560 clones already have ch340 usb/serial chips

Also the standard ftdi chip can actually do up to 12MBaud (drivers are the issue, see [www.ftdichip.com])
