how are thermistor tables created

Hi all again,
can someone explain to me how the thermistor tables are generated?

I unfortunately have fitted thermistors, epoc B57560G104F, which appear to
not be supported. I'm thinking of just entering the tables by hand but after
looking at thermistortables.h I can't see how it relates to the corresponding
temperature in the spec sheet.

I know the obvious solution is to replace the thermistors, but given that'll mean
another 2 week wait for the parts to arrive.
