I'm new to building a prusa and the first thing I unknown I have is what is the difference between the T5 or T2.5 timing belt pitch. I that the default on the wiki is T5 and obviously it's the size but what is the difference in use? When do you use the T5 or when would you want to go with the T2.5.

In short:
T5 = 5 mm periodicity / pitch
T2.5 = 2.5 mm periodicity / pitch

Are you printing your own pulleys?
If yes, definitely they are for T5. T2.5 is currently beyond usual reprap printing capabilities
If you're using vitamin pulleys and have easy access to a variety of belts, you've got the choice.
