Hi,
Would there be a difference in perimeter-quality
only
changing from a 3 mm filament to 1.75 mm...?

None at all. At worst the 3mm filament is a bit less precise to extrude if you have a direct extruder, but with a geared extruder the achievable quality should be the same.
