In that thread lajos mentioned a particular encoder that he used:

Previously Sublime mentioned one here:

He said the key bit was making sure it had a 7mm threaded shaft as to fit through the 6mm case. The one lajos mentioned seems to have a 5mm shaft from my reading of the datasheet, so take that for what it's worth. I haven't yet acquired one myself.
