I was just curious what the 2 way connector on the extruder assembly is for? I can't seem to find it in the documentation.

I think it's for the optional Z-probe for automatic bed levelling. It's not connected though, so some people have wired the cable at the other end to 12V and used it for a fan instead.

One pin of the PP connector is connected to the thermistor ground and the other goes to the spare wire on the ribbon cable.

12V is already available at the heater terminal. I think it is a second ground that people use the probe connection for to drive a second fan. You don't want to share the thermistor ground with anything that draws significant current or generates noise.
