Can I use a different z axis threaded bar finer than 1.25 pitch

I am just starting to design my printer I am new to this and I want to build one with good stabilaty and acuracy, so is it possable to use a finner threaded z axis bar for moving the extruder up and down? so can I adjust the program to allow for this?

M8 has plenty of accuracy. In numbers: 1.25 mm / ( 200 * 16 ) = 0.4 micrometers. 0.2 um for 1/32 microstepping or 0.9 deg steppers, 0.1 um for both.

That said, you can use an even finer pitch. steps per mm is the firmware variable to change.

M5 has been common to Prusa designs for some time now. It's a much finer pitch, but the nice part is that it's the same diameter as the motor shaft. You can make a coupler with just some tubing and zip ties. Being thinner, it's also less likely to contribute to wobble.
