I notice most Prusas are equipped with a very skeletonized Y axis plate with large cut outs where material isn't needed. My Folger 2020s have a big solid plate under the heated bed. Any reason not to slap it on the mill and trim off a few dozen grams?

I don't see anything wrong with that. I have the same 2020 by FT and haven't had any issue with the y axis. Might decrease the stress/heat on the y axis motor by a tiny bit, but not really necessary. If anything just save that one in case you decide to use auto level and buy a skeletonized one.
