How do I use it? I have enabled it in config.h, but cannot find the pins to connect to in pins_BTT_SKR_MINI_E3.h.

You need to add a #define MAX6675_SS_PIN and use a not used pin on your board for the select pin ss

Other than that it uses SPI pin.
